Irvine-based Pokeworks is fueling restaurant growth in the state of Texas, which has become the poke chain’s largest market with 26 units already open and six more on the way.
For future locations under development, Pokeworks said it is prioritizing high-quality real estate and flexible restaurant models that don’t require full-service kitchens. Efforts include repurposing second-generation spaces, which launch faster and are more cost-effective.
A new location in Cedar Park, near Austin took local franchisees Carol and Marcos Blanco two months to convert. The couple has three more restaurants in the works in the region.
“Finding a great location and pairing it with high-level operations is the key to building a successful Pokeworks restaurant, and they’re a wonderful example of how to do just that,” co-founder Peter Yang said in a statement.
Pokeworks currently counts 85 total locations across 22 states.
